Starting from the day I was able to consume anything but Alacta 1 plus and porridge, my favorite meal was brown stewed turkey neck or ghetto oxtail. I came to cherish the recipe even more after it became the first thing I learned to cook. A few months before mommy died, she became bed ridden and decided I needed to learn how to do things for myself so the first step was to learn how to cook. Now to my mother, if you can cook pork or turkey neck or any of those TUFF meats you can cook anything.
- Turkey necks
- White Vinegar
- Garlic, chopped
- Fish and Meat Sauce
- Black pepper
- Scotch bonnet pepper/ Country Pepper
- Ginger, chopped
- Pimento berries, crushed/whole
- Vegetable Oil
- Boiling water
- Escallion, chopped
- Sweet pepper
- Onion, chopped
- Broad Beans
- Tomato Ketchup
- Tomato, chopped
I always get my turkey necks chopped up but you end up getting them whole youll have to cut each turkey neck into 2 or 3 pieces.
Use a sharp knife to clean them up and trim away the membrane from each piece.
Wash turkey neck in a mixture of Grace Vinegar and water.
Season turkey neck with:garlic, Fish & Meat Sauce, Browning, black pepper, scotch bonnet pepper, salt, ginger and crushed pimento berries and allow to marinate( If you can do this the night before that would be great but an hour is enough)
Brown Turkey neck for about 10 minutes in hot oil. If you have time you can add water to that pot and allow it to cook slowly or you can transfer it to a pressure cooker.
Add boiling water, seal the pressure cooker and pressure cook for 25-30 minutes. Remove from flame and allow to cool.
Add the remaining garlic, sweet pepper, onion, Broad Beans, Tomato Ketchup and tomato and the other ingredients.
Cover and allow to simmer for about 10 minutes.
